How to make buttered noodles

Buttered noodles are a simple side dish you can flavor with parmesan, lemon or your family's favorite flavors.

Ingredients

  • 8 cups water add a big pinch of salt (see note 1)
  • 3 cups egg noodles
  • 3 tablespoons butter I use salted, but unsalted will also work
  • 2 tablespoons chopped fresh parsley
  • 1/2 teaspoon salt divided

Instructions

  • Add the water to a 3-quart pot and add a large pinch of salt. Bring to a boil, and add the egg noodles. Cook according to the package directions. Drain.
  • Add the butter, parsley and 1/4 teaspoon salt. Stir well and give it a taste.
  • Add the remaining 1/4 teaspoon salt if needed.
  • You can also add parmesan cheese, lemon juice, or sautéed vegetables that your family likes.
  • Makes 6, 1/2-cup servings.

Notes

Note 1: A "big pinch" of salt should be added to the water to help enhance the flavor of the noodles from the inside out. A big pinch is about a teaspoon or so for me. Just remember to add extra salt at the end carefully--taste the noodles unsalted before adding any more.
