I know what you must think. You think I roam around here in pearls and high heels cooking “fancy food” (that was according to my friend and reader Katie). I oppose both ideas. I’m not fancy. Fancy is honeysuckle infused pear galettes with lavender whipped cream. That’s fancy.
Trust me, I’m no honeysuckle, and this is just pizza y’all.
I also don’t have high heels to cook in. In fact, I don’t even own a pair.
Truth is–I’m as busy as you are. Freakishly busy. So busy that some nights I just want the fastest, most convenient thing I can whip up. This french bread pizza is it.
We’ve had a lot of different crusts in our lives. Thin ones, deep dish ones,store-bought ones, homemade cheesy-bread ones. But we seem to really enjoy this version for those nights when homemade just isn’t going to happen.
Just grab a big soft loaf of french bread from your deli, half it, and top it. Easy. I like it a lot for customizing. We have picky eaters in this house and I can easily make sections for each person.
It just means a lot to me to be able to whip up something semi-healthy and cheaper than hitting the drive through and have it ready to eat in under a half hour.
If you want less bread, don’t be afraid to dig out a bit of the center. I also add fresh herbs to mine–those are great if you have them. If you don’t, feel free to sprinkle on some dried ones. And I highly recommend fresh mozzarella. It just melts so much better. Just say no to the bag people. You can find fresh mozzarella in your cheese section wrapped in plastic. I may look like a big ball. Just don’t get the ones in water you find in your specialty cheese area. They’re too soft.
French bread pizza
- 1 loaf french bread I used garlic french bread
- 3/4 cup jarred or homemade marinara sauce divided in half
- 2 cups shredded fresh mozzarella cheese
- toppings of your choice (I used bell pepper onion, mushrooms, and pepperoni)
- Fresh basil oregano and parsley (optional)
Preheat the oven to 400 degrees.
Cut the french bread in half lengthwise and place on a cookie sheet side by side. You can remove a little bit of the soft center if you think it's too thick. I leave mine as it is.
Spread the sauce on each half.
Sprinkle on 1/2 cup of cheese on each half.
Add your toppings and then add the remaining cheese.
Sprinkle with fresh herbs if you are using them.
Bake until the edges start to get crisp and the cheese melts, about 15-18 minutes or so. Just keep an eye on it. You can also broil the top a bit if you want your toppings a little crisper.
This recipe feeds four big adults or two children and two adults well.
